Apple Pie Bars

Changes:  I used McIntosh apples instead of Granny Smith and left the pecans out of the topping.
Thoughts:  So much wonderful crumb topping!  These bars are delicious.  When I make these again, I will use a few more apples.

Baked Apple Chips

Changes:  Only used cinnamon sugar on some of the apples.
Thoughts:  These only came out ok.  Some of them came out too burned and others were still chewy.  I think that was because I had them on the top and bottom racks in the oven.  The top were chewy and the bottom were burned.  Next time I would put them side by side in the middle of the oven.  Though I may not make them again.

Quick Yeast Bread

Changes:  Ended up using about 6 cups of flour and didn’t “sweat” to soften the crust.
Thoughts:  This recipe was easy, and the bread was some of the best I have ever tasted!  I will definitely be making this again!

Pumpkin Craisin Muffins

Changes:  I didn’t chop the craisins, just used them as is.  I am pretty sure that I just used milk instead of buttermilk, but I am writing this a while after I made these, so I don’t quite remember.
Thoughts:  Very tasty, fall-like, moist muffins!

Chocolate Waffles with Ice Cream and Salted Caramel Sauce

Changes:  Waffles – none.  Coffee Ice Cream (left) – Used espresso powder in place of instant coffee and added a cup of mini chocolate chips.  Vanilla Oreo Ice Cream (right) – Used ground vanilla bean in place of vanilla extract.  Caramel Sauce – none.
Thoughts:  Both ice creams were great and easy to make.  The espresso chip ice cream ended up being my favorite homemade ice cream so far, but does not make a good bed time snack with the amount of caffeine in it.  The sauce was delicious, but a bit scary to make.  I will definitely make it again.  The chocolate waffles were just okay.  I was hoping for something more chocolatey and brownie-like.  (Perhaps I should have just made brownies.)

S’mores Cupcakes

Changes:  No mini marshmallows or chocolate topping.
Thoughts:  Okay.  The cream cheese in the frosting and filling made these taste more like chocolate cupcakes with cream cheese frosting than like s’mores.  The chocolate cake part was very moist and tasty.  The graham cracker bottom was dry and fell off with the cupcake wrapper. In the future I would mix the graham cracker crumbs with some melted butter, though I probably won’t be making these again.  They were too much of a hassle for just an “okay” cupcake.
